Exposure Eats: Ella’s creamy tomato pasta

Ella prepares pasta meal

Ella Powell shares an Italian inspired dish all the family will love – buon appetito!

I grew up in London and both my parents are from Britain. My favourite cuisine is Italian because I love pasta and pizza.

Ingredients
2 tbsps. oil
2 onions, finely diced
2 cloves garlic, finely sliced
A handful of mushrooms, finely sliced
1 x 100g tomato puree (for an extra rich sauce add 25g more)
A pinch of crushed chilli flakes
50ml double cream
6-8 fresh basil leaves
Salt & pepper
300g pasta

Method
In a large saucepan of boiling salted water, cook the pasta for around 10 minutes until just soft

Heat the oil in a saucepan on a medium heat and fry the diced onions and sliced garlic for a couple of minutes

Next add the mushrooms and fry for a couple of minutes before adding the tomato puree, chilli flakes and double cream. Allow the sauce to simmer whilst stirring it into a thick sauce

When the pasta is cooked, pour some of the pasta water into the sauce and drain the rest

Finally add the pasta and fresh basil to the sauce, mix well and add some grated cheese if you have some at home to finish off the dish

Top tips
If serving just adults a cheeky twist to this dish is to add a drop of vodka when adding the tomato puree

For a little extra protein and vitamins you could add green peas to dish when you add the pasta
