Rianne prepares Caribbean spiced corn beef with rice

Rianne shares her spicy take on a Jamaican favourite

My parents are originally from Jamaica. Growing up in my household we ate loads of Jamaican dishes like chicken and rice, and ackee and salt fish. I chose this dish because it’s very simple to make and the preparation time is really quick.

1 tin corned beef
1 onion, finely sliced
2 cloves garlic, minced or crushed
1-2 tomatoes, chopped
1 pepper, roughly chopped
2 tbsps. ketchup
½ tsp chilli powder
1 tbsp. all purpose seasoning
Salt and pepper
1 tbsp. vegetable oil
300g rice

1. In a large frying pan fry the onion, garlic and pepper in a little oil for five minutes
2. Next add the corn beef and break it down into small chunks
3. Next add the spices, chopped tomatoes, ketchup and season with salt and pepper and cook for around 10 minutes
4. Meanwhile cook the rice in a large pot of salted boiling water until soft
5. Once cooked serve with the spiced corned beef
